School is back in session! Are you back into a school routine yet or are you still struggling to find your rhythm? I like the structure of back to school but it’s hard for me to be organized enough to have that supper meal ready and on the table at a certain time. Another struggle I have is school lunches. My boys go to a charter school and at their school, they do not have a hot lunch program. So that means we pack lunch every school day! Do you know how many lunches have to be packed in a school year? A LOT! To save chaos in the mornings I like to make things ahead and freeze. When I saw this recipe I knew that it would be perfect for school lunches and it would be easy enough to whip up for dinner as well. I LOVE quick & easy meal ideas, not to mention inexpensive ones.
Mini Chicken Pot Pies
A Quick & Easy Meal
To make this you will need the following ingredients:
A can of Pillsbury® Grands!® Flaky Layers refrigerated biscuits
1 can of cream of chicken soup
2 cups of frozen mixed vegetables
1 can of cooked chicken
muffin tins
Take each of your biscuits, flatten them and put in your sprayed muffin tins.
Take your 2 cups of vegetables, your can of cooked chicken and your cream of chicken soup and mix them together.
Add your chicken veggie mix to each of the biscuits that you flattened. I used approximately 2 heaping tablespoons. A great addition to this would be some shredded cheese.
Bake at 375 for 20 minutes until you biscuits are golden brown.
Take out of the oven and serve with a side dish and you have your meal. Or if you’re like me, make a double batch and freeze each one in an individual baggie and put in the freezer for school lunches. Just grab and go!
I altered my recipe slightly. You can find the original recipe here. If you need more quick and easy recipes to make sure you check out Pillsbury’s online cookbook. You can find it here.

I've literally just posted about not having to do packed lunches for my youngest 2 next year now they will get them for free. These are a fantastic idea – am off to pin.
I love pot-pies! I need to figure out a way to make these grain and chicken free, maybe turkey. 🙂 Yummy!!
I'm not a big pot pie fan, but LOVE bisquits! This might be a good compromise dish for hubby. Will pin for those cold, comfort food days.
I don't have a favorite, but this looks like one that I would like to try. The freezer idea…so cool. It would work as a quick lunch for me also.SharonMake It Or Fix It Yourself
Yay for easy meals! We love chicken potpie, and this version looks even simpler than the one I typically use. Pinning it! 🙂 Thanks for sharing at Grace at Home link-up.
I was going to ask if they freeze well but, you answered my question. Perfect! I think I rather try this than make my big recipe, just because you can make small portions. Can't wait to try. Theresa @DearCreatives

you have cheddar cheese soup pictured but the recipe calls for cream of chicken? which are you suppose to use?
I made these last night. My biggest problem was that when they were done, and I cut into them, there was still A LOT of biscuit that wasn't cooked. The outside, bottom, and a little bit of the top of the biscuits were cooked. Have you had this happen?? What should I do differently? It was soo disappointing! Everything looked and smelled delicious, but cutting into them and finding lots of dough, was just a big let down. Any suggestions on how to fix this for next time?
Oh stink! That is disappointing. No, I have never had that problem. Could you try changing the shelf you cook it on or cook the muffins for a few min. before adding the filling?? Or even up the temperature 5-10 degrees/. Just some suggestions. Sorry it didn't work the way your wanted. Barb
I was reading all the comments and instead of biscuits I used flaky Cresent rolls, this made the breading not nearly as thick therefore cooking all the way through! It took a little longer to stretch the dough out but it was totally worth it and turned out absolutely delicious! We added a little garlic salt and onion powder also!! 🙂
Awesome!! Great suggestion. I've got to try that. Thank you! BarbSent from my iPhone
Would this work just as well with canned veggies?
I have not tried canned but I see no reason it wouldn't. If you try it let me know how it turns out. Have a GREAT Sunday.
Do I need to do anything extra if I freeze them for a school lunch? Like heat before? Or do they thaw out on their own by lunch time?
They should thaw out on there own if taken out of freezer in the morning and then my boys just microwave for 1 min. Thanks for asking and have a great night.!
I just made these for lunch, I had 3. This is so simple and so good. delish. It's just me i cook for and I like easy recipes.
Kim so glad you liked them and that it was easy. I LOVE, LOVE, LOVE easy too! Thanks for stopping by! Barb
