I am enjoying finding new recipes to try. This was my latest- Buffalo Chicken Potato Skins. They made a great appetizer for a party we went to.
The ingredients you will need are:
6-10 washed russet potatoes
2 cups of shredded leftover rotisserie chicken
(you could cook 2 chicken breasts or use canned chicken as well)
1/2 cup of Frank’s Hot Sauce
1 cup of shredded cheese
Celery
Carrot Sticks
Blue Cheese Dressing
Here’s how you do it:
Microwave your potatoes until tender or if you have extra time, you can bake them until tender.
Cut the potatoes in half. Scoop out the pulp of each potato.
Flip the potatoes over and brush olive oil on each potato skin and broil for 3-5 minutes.
Take your shredded chicken and add your Frank’s hot sauce and mix together.
Add the chicken mixture to each potato. Add your shredded cheese and bake at 400 degrees until cheese is melted.
Cut your celery and carrots into matchsticks.
Add a dollop of Blue Cheese Dressing (or you can use Ranch dressing or sour cream).
Add a couple carrot sticks and celery to each potato.
Now that they are finished, eat and enjoy!!!
