Christmas morning at the Camp house can be a little CRAZY! We have 16 people who wake up on Christmas morning to Santa gifts and stockings. After opening our gifts all 16 of these people are HUNGRY! If I’m not ready with breakfast it can cause some issues. So I decided to make Christmas morning hassle free with make ahead breakfast casseroles.
This year I gave myself a little Christmas gift and made 3 breakfast casseroles and put them in the freezer and they will be pulled out the night before and thrown into the oven as we wake up.
Here is what I made in the time it took to fry the sausage and bacon.
Bacon Cheese Egg Casserole
Ingredients:
- 8 eggs
- 2 cups of shredded cheddar cheese
- 6 slices of bread
- 2 cups of milk
- 6 slices of bacon fried and chopped into small pieces
- Pepper to taste
Grease a 9 x 13 pan. Lay your bread along the bottom of the pan. Whisk together your eggs, milk, bacon and 1 cup of your cheese. Pour mixture over your bread. Top with remaining 1 cup of cheese. Cover with foil and freeze. To bake remove from freezer the night before. In the morning bake, uncovered, at 350° for 30-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving. Approx. 12 servings.
Ham & Swiss Hash-brown Casserole
Ingredients:
- 8 eggs
- 2 cups of shredded Swiss cheese
- 1 24 oz. bag of hash-brown potatoes
- 2 cups of milk
- 2 cup of ham chopped into bite sized pieces
- Pepper to taste
Grease a 9 x 13 pan. Put your potatoes in the bottom of the pan. Whisk together your eggs, milk, ham and 1 cup of your cheese. Pour mixture over your potatoes. Top with remaining 1 cup of cheese. Cover with foil and freeze. To bake remove from freezer the night before. In the morning bake, uncovered, at 350° for 30-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving. Approx. 12 servings.
Sausage Egg Casserole
Ingredients:
- 8 eggs
- 2 cups of shredded cheddar cheese
- crescent rolls
- 2 cups of milk
- 1 lb. of sausage fried and crumbled
- 1 t. of dried mustard
Grease a 9 x 13 pan. Lay your crescent rolls along the bottom of the pan. Whisk together your eggs, milk, sausage and 1 cup of your cheese. Pour mixture over your crescent rolls. Top with remaining 1 cup of cheese. Cover with foil and freeze. To bake remove from freezer the night before. In the morning bake, uncovered, at 350° for 30-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving. Approx. 12 servings.
I can’t tell you how happy seeing these 3 breakfast casseroles in the freezer make me! Seriously, am I weird??
