I’m on a roll! Last week I shared with you Mary’s Yummy Cucumber Salad recipe and today I want to share another scrumptious salad my friend Joni made for me a few years back, that my family LOVES. I’m so blessed to have friends who are GREAT cooks!
This is a really quick salad to make. Here’s how you do it:
Add a layer of mixed greens, lettuce, etc. I use whatever I have on hand to a 9 x 13 pan. For this tutorial I used romaine lettuce.
This step you have several options. You can coat the beets with olive oil and roast. Or you can cook it like a potato in the microwave. Or you can do it like Joni does now and just peel it and use it raw. I’ve had it all three ways and they are all GREAT!
Peel and julienne you beets. You will need 2 -3 depending on how big they are.
Add your beets to your lettuce.
Goat cheese used to be a luxury for me because it can be so expensive for a small amount but not anymore! At Aldi’s I can buy a package like this for 1.99. You can also get it at Sam’s for a great price but it usually molds before I can eat it all.
Crumble 1/2- 3/4 of this package of cheese.
Add it to your lettuce.
Joni makes an awesome balsamic vinaigrette. She adds garlic which makes it extra yummy!
Mix all this together and pour over your salad.
1/4 cup balsamic vinegar
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil
Enjoy every last bite of this scrumptious salad!
