Hi everyone! I hope you had a great 4th of July! We sure did. I hope to share some of the highlights from our week soon.But today I want to share a salad I made for myself. I’ve been trying to eat a little healthier and I shared with you here how much I love the ingredients in a caprese salad so thought I’d make it easy on myself and chop everything up ahead of time. I made a Single Serve Chopped Caprese Salad. Here’s how I made it:
Gather your supplies.
You will need:
2 Roma tomatoes
2-3 slices of mozzarella
4-6 Basil leaves
Balsamic Vinegar
Olive oil
1. Wash your tomatoes and dice them into bite size pieces.
2. Cut your mozzarella pieces into bite size pieces. If you like more cheese add more.
3. Chop your basil leaves into 1 inch pieces.
4. Drizzle with olive oil and balsamic vinegar.
I think the flavor is better if it chills an marinades before you eat it, but I rarely wait that long because I can’t wait to sink my teeth into it.This could also be made for a large group if you wanted. I’m sure it would be a hit.
