I have zucchini coming out my ears, but I’m so excited because the last few years our zucchini plants would shrivel up and die. We’d get one or two and that was it. But not this year. So with an abundance of zucchini I needed a new recipe. I found a recipe for Zucchini Pizza Bites and gave it a try. It is yummy and will be a keeper in my summer meal selection.
Don’t those look great?? Here’s how you do it. Wash your zucchini. You don’t want your zucchini too small because you can’t fit much on. But you don’t want them too big either.
Cut into 1/4″ slices and brush with olive oil.
I used spaghetti sauce but you could use pizza sauce. Add your desired toppings. I added pepperoni and onions because that’s what I had on hand but would love to add ham and mushrooms.
Add your cheese.
Bake in a 450 degree oven until cheese is browned.
These make a great appetizer for a get together or I ate them as a meal.
