I shared with you guys my Slow Cooker Pork Roast w/ Apples & Onions which was soooo yummy! Well, with the leftover pork I made these Cilantro Lime Pork Tacos and I’m not sure which was better but I do know the convenience of getting two meals out of my pork was awesome!
You can still do this meal without having cooked the recipe I mentioned above.
You will need:
Pork
1 Cup of Cooked Rice
1 Cup of Drained Black Beans
1 Cup of Salsa
Cilantro
1 lime
Flour tortillas
Cheese
Lettuce
Avocado
Sour Cream
Put your pork in the crock pot. Season it with salt and pepper. Cook for 6-8 hours on low or 4-5 on high. Once done pull pork out of crock pot and shred it.
Add 1 Cup of drained black beans.
Add 1 Cup of cooked rice
Add chopped Cilantro- I used a small handful.
Add 1 Cup of Salsa and the juice from 1 Lime
Heat your flour tortillas or corn tortillas.
Add your pork/rice/beam mixture to the tortilla. Add a slice of avocado, lettuce, cheese and sour cream if desired.
