I have a quick and easy recipe for you today, Chili stuffed potato skins. They are yummy!!!
You will need:
6 potatoes washed
1/2 cup of olive oil
left over chili
1 cup of shredded cheese
1/4 cup of sour cream
black olives sliced
Wash your potatoes and place in the microwave for 15 minutes.
Cut each potato in half and scoop out the middle of each one.
Turn over the potatoes and brush olive oil on each one. Broil for 3-4 min. until crispy.
Turn over the potato skins and add chili to the inside.
Sprinkle with shredded cheese.
Bake in a 400 degree oven until cheese is melted.
Add a dollop of sour cream and top with an olive.
These make a great appetizer or add a salad and you have a meal. It’s a GREAT way to use up leftover chili too.
